After 16 years truckin’ along in Connecticut, Taco Pacifico has finally thrown in the towel (or dish rag, I should say). I want to thank you for your support and loyalty all these years. I have so many great memories, from my humble beginnings outside Dino’s Car Wash in Madison to the 1,500+ food truck parties we have catered throughout this time. It’s been nothing short of a wild ride, but all good things must come to an end and that time for me is now.
To be honest, I’m totally burnt out! Yes, as fried as those golden tortilla chips. Maybe even as fried as the Clam Castle seafood we’ve been rolling out for the past three seasons. I always thought I had a few seasons left in me before calling it quits but an unexpected health episode this past November really pressed the fast forward button on my time in foodservice. It’s all good, I’m ready to move on. I wanna move back to southern California - the inspiration behind Taco Pacifico. I can’t take any more of these New England winters and I want to enjoy personal time with family in the summers.
